ingredients:

  • small bunch broccoli rabe or broccolini or broccoli
  • 2 tbsp olive oil
  • 3/4 lb. boneless, skinless chicken breasts
  • 3-4 cloves garlic thinly sliced, or shallots if you prefer
  • 3 tbsp white wine
  • 2 tbsp butter
  • salt, pepper and crushed red pepper flakes to taste
  • 1 lemon cut into wedges

How to cook Lemon Garlic Chicken

  1. Cut each chicken breast into three pieces: from the pointed end, cut one piece up to the area where the breast is twice as thick as the thin end. Then cut the thicker piece in half horizontally. You should have three pieces roughly the same size and thickness. Repeat with second breast if it’s small enough to require two breasts for 12 ounces. Sprinkle the chicken with salt and let sit for 15 minutes. This step is key to perfect chicken texture.
  2. Trim the broccoli rabe and place in a skillet with a lid so the vegetable is in a single layer. Add ¼ cup water and salt lightly. Turn the burner onto medium and let steam until desired texture is achieved. About 3-4 minutes. When the broccoli rabe is done to your liking, remove the pan from the heat and take off the cover so it will not overcook.
  3. Heat a large skillet over medium high heat and add the olive oil. When the oil shimmers, add the chicken in a single layer and allow to cook, undisturbed for 2-3 minutes.
  4. Turn the chicken pieces to the uncooked side and cook for about 2 minutes. Clear a space in the center of the skillet and add the garlic. Cook for about 30 seconds, stirring constantly, do not allow the garlic to brown. Reduce the heat to medium if needed. Add the wine and stir thoroughly. Let the wine reduce for about 1-2 minutes.
  5. Add the broccoli rabe and stir to combine. Taste for salt and add pepper and crushed red pepper flakes. Add butter and swirl to combine. Squeeze one wedge of lemon over the chicken and broccoli rabe. Serve with additional lemon wedges.
