Harris always says that the whole raving over the crust thing in pies is ridiculous. For him it’s all about the filling. But then it isn’t a pie. And the crust is totally worth raving about when it’s great which often, it is not. And then there’s the whole sugar problem. So I decided to make a dessert that recalls the blueberry pie without the crust (low carb!) and no added sugar. We really liked it, hope you do, too! In the comments below, give us your pie thoughts. Why should the crust get all the attention? Here's a yummy, low carb dessert that's pretty enough for a party!

ingredients:

  • 2 cups blueberries, divided
  • ¼ cup water
  • ⅓ cup Swerve brown sugar sweetener (it’s from New Orleans!)
  • ¼ tsp ground cinnamon
  • ½ tsp lemon zest
  • ½ tsp lemon juice
  • ¼ cup red wine (or more water)
  • 2 tsp cornstarch
  • ½ cup crème fraîche
  • 1 tsp Swerve plus a bit more to garnish

instructions:

How to cook Blueberry NoPie

  1. In a medium saucepan, add 1 ½ cups blueberries (reserve the remaining ½ cup) and water over medium heat. When it starts to bubble, add sweetener, cinnamon, lemon zest and juice and stir to combine. Cook for 5 minutes, reducing the heat if necessary. You want a nice simmer, not a hard boil.
  2. Meanwhile, mix the cornstarch and the wine until combined. Add to the blueberries and stir until the mixtures thickens. About 1 minute.
  3. Allow to cool for 10 minutes. Add the remaining blueberries and combine gently. Pour into 4 ramekins or small dessert dishes and refrigerate for at least an hour.
  4. When ready to serve, combine the crème fraîche and 1 tsp Swerve and top the blueberries. Sprinkle a bit of the Swerve on top of all.
