  • 4 skin on, bone-in chicken thighs
  • Cajun/Creole seasoning

How to cook Cracklin’ Chicken

  1. Season the chicken. Place in a COLD 10-inch skillet, skin side down. Turn the burner to medium/medium low. Let the fat render and the skin get crispy, about 10-12 minutes. This depends a lot on your particular stove. Turn the heat down if the skin browns too quickly. You want all the fat to render to get the crackling crunch.
  2. Turn the chicken and continue to cook until the meat registers 160-165 degrees F., about 10 minutes. Do not cover the pan or the skin will soften because of the steam. Serve immediately. Like you could wait. I mean come on.

This chicken recipe gives you the crunch and crisp of fried chicken without the carb-heavy coating. And there’s no added fat, just what the chicken already has. Two ingredients and ready in about 20 minutes, it’s faster than take out. The meat is juicy and succulent, too.

Cracklin’s are a Louisiana favorite and if you follow low carb, keto and/or paleo, they’re our “pig candy.” But you gotta have supper, too, and this recipe gives you both.
