Grilled Chicken Thighs

We’ve been making this recipe for a very long time. It’s courtesy of my friend and just-out-of-college roommate, Sandy. Her recipe called for beef, but the flavors lent themselves to boneless chicken thighs and that’s how we’ve made it though the years. I’ve also added some olive oil and Sherry to her recipe.

The marinade is simple and the technique is, too. You can use a grill pan, gas or charcoal grill. It tastes great any way you fire it up. I like to serve this dish with rice and a green vegetable like broccoli. Here I’ve garnished with chopped cilantro and avocado slices.

Sadly and I lost touch with Sandy a few years back. She was going through a particularly rough time. I hope she knows that I’ll forever treasure her friendship and love her always.

Grilled chicken that tastes great cooked indoors or out. Fast and easy.

Ingredients

  • 8 boneless, skinless chicken thighs
  • ¼ cup soy sauce
  • ½ medium onion, chopped
  • 2 tablespoons dark or light brown sugar
  • 2 tablespoons olive oil
  • 2 tablespoons Sherry (optional)

Instructions

  1. Combine all ingredients in zip top bag or bowl with lid. Marinate 30 minutes.
  2. Turn gas grill to medium high and heat for 5 minutes . Or light charcoal briquets for grill until coals are uniformly covered in ash. Or heat grill pan over medium high heat for 3 minutes.
  3. Cook turning frequently until golden brown and internal temperature is 175 degrees F.
  4. Serve with cooked rice and green vegetable if desired.
