Gene's Surf and Turf with Chimichurri Sauce

As I mentioned in the post featuring Barb’s Salmon and Asparagus, I also created a recipe for Barb’s husband, Gene. using the ingredients he chose for the hunting and gathering demo a Whole Foods Market. I changed up the recipe a bit by grilling the steak, shrimp, mushrooms and onion on skewers. It’s summertime fun all year round.

Gene's Surf and Turf with Chimichurri Sauce
Home can be a fabulous and much-less expensive steakhouse with this surf (shrimp) and turf (steak) supper. Onions and mushrooms add the veg, and the yummy chimichurri sauce brings it over the top.
Ingredients
- 12 oz. rib eye or NY strip steak
- 8 oz. jumbo shrimp, peeled and deveined
- ½ red onion, cut into wedges
- 1 clove garlic, minced
- 8 oz. mushrooms, trimmed
- salt and pepper to taste, or use seasoning blend: Cajun, Lemon Pepper, etc.
- 2 tbsp. unsalted butter
- 3 tbsp. red wine vinegar
- 1/4 cup olive oil plus 2 tablespoons
- 1/4 cup fresh parsley minced
- 1/4 cup fresh cilantro minced
- 1 tsp. dried oregano
Instructions
- Season steak and rub with 1 tbsp. olive oil. Cut into 1 ½ inch cubes. Set aside on a plate. Season shrimp and toss with 1 tbsp. olive oil, set aside on a separate plate.
- Thread skewers with meat, shrimp and vegetables, alternating items.
- Chimichurri Sauce: In a small bowl, mash the garlic clove, and sprinkle with salt and pepper. Add parsley, cilantro and oregano. Add red wine vinegar and mix. Add 1/4 cup olive oil and whisk to combine. Taste for salt, pepper and vinegar, adding more as desired.
- Grill skewers on gas or charcoal or in a grill pan or in an air fryer. Check frequently for temperature of the steak, 125 degrees F for medium rare.
